Acceleration seems off

Car: 1988 Firebird Formula
Engine: 350 TPI
Transmission: 700R4/4L60
Axle/Gears: Stock
Acceleration seems off
I could be just over reacting some, but tonight on my way back home I figured since it was midnight on an empty road I would try to push my car to its very limit since God knows how long now. When I floored the gas, the RPM's shot straight up to 5000 and it barely accelerated. I tried putting the car in drive rather than over drive, and it seemed to do the same exact thing, and when letting of the gas it seemed to even stay idiling high for a bit longer. Then I just simply tried to not floor it all the way, but close, and it accelerated better, but still no where near what I remember this car did when I first got it.
Could this be a transmission thing? Things that have been changed since I first got it: Replaced the block (which the original had new roller rockers, some cam work, bored out 60 over)... the spark plugs got changed from short autolight racing to some regular longer spark plugs (guy told me they would make no difference, but im not so sure).
Couple other tid bits on the car, is that when I go to start it up when cold, it will start up fairly quick, but sometimes will idle real low, maybe 400 to 500 rpm's then idle up to where it should. Once in a great while it will die out, but a second start will keep it running just fine. Once it is warmed up, for the rest of the day it seems to turn and turn when trying to start. Sometimes requires me to quit turning the keys a couple times, until finally an attempt will fire it up. Other than all that, it runs fine. Smells like the car does run a little rich too. Any advice would be appreciated.

how bout a plain old tune up. plug wires, cap, rotor, set timing, change air filter. set minimum aircheck vacuum hoses for leaks, set the tv cable adjustment, trans fluid and filter change.
