1st pic like you stated is oil pressure sending unit. For your car, it only serves as a backup fuel pump circuit in the event that the fuel pump relay is disables/malfunctions. Sometimes referred to as a fuel switch. You'll also have a oil pressure sender atop the china wall just to driver side on the distributor - that supplies the guage.
The connector unplugged I'm unsure of where/what it is. I'm looking to see what I can see - is this a carbed car or TPI? What are the wire colors to that 2-wire connector that is unplugged? Might be A/C pressure switch connector, manifold air temp sensor, or something else - wire colors will help trace it down.
The last pic is either the fan switch or the knock sensor - they look identical. But the fan switch is in the head, and the knock sensor is in the block - I can't tell from your pic what location is.

It's the fan switch.
KSs are much larger OD, and go into a much smaller hole in the casting.
Not sure about "chugging".
For the unplugged connector, what color are the wires? There is a plug present in seemingly the majority of these cars in that general area, with a pink/blk-stripe and a black wire in it (ECM fused ignition and ground); it is never plugged into anything; nobody knows what it's for; personally I suspect it was used for some production-line diagnostic or similar function but has no further use after the car has left the factory.

Yep - last one def fan switch.
If you have dual fans, yopur secondary fan won't run without that fan switch being connected and working.

a disconnected knock sensor will produce "chugging". The knock sensor is the the blue wire.

Also, your secondary fan uses a pink/black wire along with a black ground wire. They should be on a pigtail and plug directly into your fan.
