84 Camaro Idle and stall issues

Hey guys, I've been having some troubles with my car lately and I was hoping someone here might be able to help me. I will try to give as much detail as I can.

About a month ago when I went to get it going after the winter, I discovered the motor was constantly flooding. I took it to a local garage and they said my choke valve was burnt out so it was staying on all the time. So I got it a new choke valve and new set of spark plugs. No issues after that.

3 days ago it started raining heavy. On my way to work, I put the clutch in to change gears to pull into the parking lot and it stalled. I dumped the clutch to start it back up and it ran the rest of the day no problem. The next morning, still raining. It did the same thing in the same place. Right when I go to pull in to work it stalled. This morning, still raining. Sitting at the stop lights on the way to work the rpm dropped from 800 to about 350. Idling that low at 350 the choke light was flashing and the whole car was jerking as it was trying to stay running. It has been idling that low and rough all day now.

My immediate thought is it must have something to do with moisture. Because of all the rain. But it seems like it is a choke problem. I'm beginning to wonder if its possible if something else is wrong that my choke keeps getting burnt out?

I have a new Holley carburetor to put on it, but I dont want to put it on if its just going to get its choke valve burnt out too. I just dont want to damage the new carb with whatever the issue is right now. Any thoughts or opinions are much appreciated.
