A few miscellaneous questions..
Info: New motor with 1000 miles.
1. Is it normal for there to be some (steam/oil mist?) coming from my valve cover breather? There is no smoke out the exhaust/motor isn't burning oil. I have a brand new PCV.
2. My motor likes to run at 210-220 degrees. I can see when the thermostat opens as the temp will periodically drop to 180-190 but then go back to 210-220 for the majority of operation. I think my thermostat is rated at 190 or 195. Does my motor just need a cooler thermostat for cooler operation or does the heat signify other problems?
3. Should I be running my fuel evap canister purge valve actuator line to ported or manifold vacuum?
4. Is it common to install an aftermarket knock sensor for safety and accuracy of tuning? (Like for a warning light gauge)
Thanks guys!

1) Yes, mine does the same thing.
2) I had a 195 stat in my car when I got it, and sitting in traffic she would frequently roam up to 220-230* F, I swapped the 195 with a 160 and saw a night and day difference.
3) Not exactly sure.
4) Yes.

Re: A few miscellaneous questions..
I just swapped out my 195 thermostat for a 180 and it has made a big difference like you said. Now my motor runs at 180-195. Yay!
Re: A few miscellaneous questions..
Gauge may be inaccurate. Double-check the actual temperature of the coolant. Try a IR temp gun. HF sells a cheap one, but it works fine for us part-timers.
Shoot several places - radiator, block, heads, hoses.

The fan doesn't even turn on til above 225F

No
Never even heard of one.Millions of cars running perfectly well with a stock KS
Notwithstanding the KS has nothing to do with tuning.
It either works or it doesn't.Period
