t'stat/fan switch questions

I live in Hawaii where its pretty warm and the traffic is terrible. I have a 92 z28 with l98, g92 etc. and I tend to run hot, especially once I get stuck in traffic. (I think high running temps caused me to lose a couple of alternators and gave problems with a sticking starter solenoid). As such, I wanted to change out the stock t'stat (go with 180F) and possibly the fan switch. All those aftermarket chip manufacturers (hypertech & jet) market their products with matching t'stats & fan switches so I was going to go with a packaged system. However after reading the forums and how these chips are ripoffs, I was wondering if I could still change the t'stat & fan switch and keep the stop chip. Will I run into problems? or Is the aftermarket chips okay for this kind of applications.
any thoughts? thanks.
