How does having a larger spark plug gap benefit performance when you have an ignition system powerful enough to justify a larger gap.

And, if you can have a bigger gap and don't do it, what are the drawbacks to that?

larger gap means a larger surface area of the spark, more spark area to light the a/f mixture. you need a stronger ignition system or you get a weaker spark as the gap increases

 

Your stock coil puts out about 37K volts. By going to an aftermarket coil (MSD Blaster 43K) (HyperTech 53K) and increasing the gap you will expose more spark as Ede says. Further you can grind the electrode back then set the gap to .50 to expose even more.
