Gutting engine compartment

Ok, I need some help here. My motor is in and there are wire looms and other stuff I have no idea what to do with. Plus I have no use for the A/C and heater (Summer car with a/c being windows) So how do I remove all the not needed stuff without worrying about screwing up lighting and keeping the gauges and whatnot working? Any ideas or tips? Thanks

You can cut most everything off that's in the passenger side, but the lights and stuff are on the drivers side. I just pulled my motor and whacked a ton of wires. I guess I'll find out if I cut anything I needed when I put it all back together.
