You will loose. The 4th gen f-bodies had much more powerful v6's and ran in the 15's. I believe the SN95 mustangs (like the 97) also ran in the 15's with a 6 although some years are quicker than others, both cars will be much faster than your 3.1 or 2.8.

97 Mustangs ARE NOT 15 second cars. They have 150 hp and they run 17s, I believe. 98 was a changing year. They got...190 hp, I believe...

I actually plan on racing a 97 Mustang with the Crown Victoria once I get it running better. And get a couple of upgrades. I'm also going to suggest that he let someone ride with him. He doesn't know much about racing.
Let's see...
Crown Vic-- 3800 lbs, 4050 lbs with me in it.
140 hp/250 lbs-ft
Mustang-- 3350 lbs, 3450 lbs with him in it.
150 hp/??? lbs-ft
Got to find a big guy and get 20-30 more hp for the LTD. He's got big speakers, I think...
Which one of those cars is yours?

Okay, from 1994-1998 the V6 Mustang had 150 hp, and were 16-17 second cars.
From 1999-2003 the Mustang had 190 hp (Might have been 193, but i am not sure) and were 15-16 second cars.
From 1993-1995 the V6 camaro had the 3.4 and were 16-17 second cars.
From 1996-2002 The Camaro had 200 hp and were 15-16 second cars.
I am not sure on the V6 thirdgens, but I would assume no better than high 16s, pobably 17s.

Are 4th gen v6's really that quick. I raced my friend in one. we are both 5 speeds and I have a 305 TBI. We raced from a light and I was ahead by like 2 cars at 45.

The V-6 4th gens are not that fast. Faster than a 6 cyl thirdgen yes. Faster than much else no. They are quick and peppy for what they are. But not much more than that.
If you plan on racing one in a thirdgen 6 cyl be preppared with extra lube. You will get it up the butt pretty hard.

96+ fourthgen V6's run just a hair under what a 305 TPI thirdgen runs... I bet you could take a pre-99 mustang v6 though... they only put out 160 Hp and weighed a lot more than a thirdgen... granted the '93-'95 fourthgen had only 160 also, but it weighed less than those mustangs.
