Can't tell you with 99% accuracy, but most likely not...the ECM will probably default to running off "assumed" values based on TPS input. Least that's what a MAF car will do...on MAF, if it fails while driving, ECM stores last known MAF input...if unplugged, then will store some high number of MAF and run off TPS, etc and still make A/F (or try) corrections.

I think the only way to run in "limp home mode" is total failure of PROM...not just one sensor input. LHM is preset externally to the PROM, IIRC.

So what's your problem/car/induction anyways?

The MAP should have max and min tables for a given rpm on map reading, if its outside of that you should certainly throw a code, and the ecm may or may not go into limp.

A MAF car will because its so heavily dependant apon LV8 and Airflow in almost all its tables

I believe that when you unplug the map sensor the car will use predetermned values based on this fault code and thus be in limp mode. This means rich a/f mixtures, 22 degrees max timing or so, and possibly other things to protect the engine. Since the map sensor in a sd car is very critical, unplugging it leaves the computer blind.
