Well, supposedly the 190s and 195s flow the same, just the 195s are for larger race port intake manifolds. I would go with the 190s with the intake you plan on running.
The rest will determine your compression ratio. The larger cc chambers will make less compression, and the smaller cc's make higher compression.
Is this going to be a N/A motor, forced induction, sprayed?
Are your pistons dished, domed, flat top?
Is the block decked?
You should decide on these before you choose a chamber size.

For example, I chose the 190s and had them milled to 58cc to make around 10.2:1 CR ratio. My block is not decked, pistons are at stock height and stock dish size. With a thin head gasket I get around 10.2:1, which is good for a n/a motor with aluminum heads.

The AFR 195's come port matched to a 1205 Felpro & flow very slightly better at high lift than the 190's. My calculations show with a flat top piston, down .015" below the deck, 68cc chambers & a .028 gasket, a CR of 10.3:1. Which is about where I am at.
