Good Things to replace while intake/fuel rails are off?

I'm switching over to the bosch iii injectors (got em from southbay, they are stamped Ford on the side? Explanation?), and I'm wondering what are some good things to replace that wouldnt be so convenient to replace otherwise? So far, I'm thinking:

-Manifold Air Temp Sensor
-EGR Valve (Any way to test if my current one needs replacing?)

Any other things I should replace while I'm at it?

Only replace what is broken...When you change to many parts at once it makes it very difficult to diagnose a problem. Many new parts today are junk right out of the box.

I just did the same thing. I redid the gaskets for the intake runners/plenum/TB, and I put in a new thermostat. Spent a fair bit of time cleaning stuff. Otherwise, if its not broken....
