Need help my daily. Won't stay running rebuilt 5.0 tpi

Hey guys.
I have a 91 z28 5.0tpi. All stock. had the motor rebuilt and I put it back in. It took me awhile to get the timing set and the vacuum hoses hooked up. I believe I have them all hooked up and cant find any disconnected hoses. I can cold start it and it will run. If I give it gas, I have to slowly accelerate. If I hard accelerate it bogs and shuts off. Then when going to turn it on again it starts but dies right after it starts. I haven't driven it yet so don't know if it will drive. Would removing the AIR system and components help? I'm in Texas and it wont really hurt anything. Any ideas and help? trying to upload videos just having a hard time

I had a fresh rebuild act the same way. In hindsite, I suspect it might just have been the tightness of the new bearings. After forcing it to run with extra throttle, it eventually settled down smooth. It took a while though.
