89 IROC 5.7, No start, sputters, starved?, then stalls

Ok, I have an 89 IROC with the 5.7. I recently replaced the fuel pump, filter, relay, and thought I was good to go... but.
I had fought the tank back in by myself in a manner that would make the Italian Stallion proud. So i still have rearend up in ai at this point an want to test her out before going any further. Exhaust is uncapped at the cat, and fired right up, good throttle response, just a bit of a high idle... well really high. I can't say exactly how high because I seem to have some electrical problems in the dash and everything is just pegged. So this was last night, but today I go ahead hope the exhaust up the panhard bars in all that jazz, lower down on the ground, she's looking good lean and mean, go to start her up and she acts like she's starving for fuel. Now I do have to get a new plug that plugs into the fuel pump relay because the wires can pull out of the back of it easily but I can jam and then they're good enough to get the signal back and you know all that.
its just kicking over and fires up but sputters no matter the position of the throttle, cant get it to feather out so it just dies.
I have no idea where to even look to figure this out, and it's not throwing any codes at all. She has set for about 3 years prior to this covered indoors because she has my baby and she's a beauty LOL but I don't know I just don't know.
I was hoping maybe somebody has some direction I could go with it. I don't know what to write down here... maybe ask me some questions that might get me going. And thanks in advance guys I already know that any advice from you all is going to be valuable, appreciate it.

Do you have the original injectors ?
does it stay running with carb/choke cleaner ?

Has new injectors, but they are stock lbs.
It would only fire up with starting fluid before I replaced pump, filter an relay.
I feel like a boob on this one, but i forgot that I put the gas in with the rear jacked up, so I thought maybe I didn't put enough in for it to pick up when the car was level. That fixed the no start, sputter/stall issue.
Whole new issue now...
She fires right up when key is clicked over, but goes full throttle immediately, even though I'm not giving it any throttle at all. I'm thinking maybe I screwed up the vacuum lines somewhere...
The thing is when its idling at full throttle, the butterfly on the TB is closed just as if you would start an let it idle. Any ideas?
