Well, to go any futher with my motor, I need to get this stock 700R4 out of my car and either get a built 700R4 w/ stall or get a T56...
The T56 might wind up costing more but not a big deal. Also consider the automatic will be new and the T56 will be used.

I would go with the T56. You'll be happier with it in the long run, plus it will probably last longer than a 700R4. I am currently on my third 700R4 in my car, and I have come to hate them. Even with a shift kit and a vette servo, it still has crappy gear ratios. Only difference now is it will bark the tires going into 2nd.

My mind is pretty much made up for getting the T56, I just wanted some closure and to see if someone had some info I didn't know about 700R4's not sucking.

Are you mainly using this car for drag racing, street, auto-x..?
If you are looking for consistent times in drag racing, then the auto is for you. Auto-x is more suited to a manual. It is also a matter of personal preference.

I lost some time off my ET by going to a T-5 from a 700R4. Note that I am trapping about 3 mph higher now but I spin in every gear so that's why I am slower I figure, but with the T-56 you could run slicks.

700R4s are great for trucks and tow rigs.
T56s are where it's at for performance. Nothing compares to going into a turn heel/toe downshifting two gears, hitting the apex, planting your right foot, and having the @$$ end walk sideways while you powershift the next gear.

Yeah, that's true too. Personally I just hate an automatic. I drive stick nearly every day, so when I go back to an auto the car feels sluggish and seems like it lacks power. I like the neck snapping response that a stick offers.
Auto's do have their purpose though. Off road trucks almost all run autos. It's hard to shift and modulate the clutch while bouncing over boulders. It's also hard to stop on a steep hill, check the terrain, and then get back in and take off without rolling back and hitting the guy behind you, which I'm told is frowned upon by serious off roaders.
