Rear Axle Bearings Shot?
When going slow (stops once I get to about 15 mph) My rear is making a caclinking noise (sounds like spokes on a bicycle that little kids ride) Sounds to only be coming from the driver side. I'm thinking its the bearings but wanted a second opinion before I tear the thing up. Anything else this could be? Or is there anyway to check the bearings without removing the axle first?

No, you've got to pull the axels out. If the bearings are indeed shot most likely the axels themselves are ruined too. Because GM was too cheap to use bolt in bearing retention and pressed on axel bearings a portion of the axelshaft is actually the inner race for the axel bearing. When the bearings go bad they usually gall and ruin the heat treat of the axel shaft in this area. Reusing worn out shafts can result in shaft failure at the bearing seat and the wheel literally flying off. Just keep in mind that replacing the bearings means replacing the bearings, seals, and oftent he axel shafts. New shafts from Moser are $250 a pair, just be sure to specify 26 or 28 spline.

Well, then there's the possibility that the used rear will have the same problem...
Years of experience have led me to rebuild anything I pull from a junkyard. Basically what I'm looking for is a good core. Only occasionally will I grab a used motor and just bolt it in, and that's usually because I've heard it run in the car prior to pulling it.
If you want 3.73s I would say just build what you've got as long as it's strong enough for the power you've got planned. If you've got 26 spline axels now's a perfect time to step up to 28s. Unless you cna lay your hadns on a recently rebuilt rear through the classifieds, etc.
