Jumping
I drive an 84 z28 camaro 305 engine with a 700r4 tranny. How do you replace the universal joint.

Asking that question suggests that you don't have the tools or the know how to do it. It is easy once someone SHOWS you how to do it with the right tools. I suggest pulling the drive shaft and taking it to a place to have the UJ's put in for you. I have replaced many and still get frustrated when replacing them.

And you named this thread "jumping" why?!?
You need a torch to heat it up and ooze out the snake like nylon. It's a little weird the first time. Between that, a hammer and the right sized socket (doubt you have it), it's fairly easy - if you've done it before.
BE AWARE - the smell once you get all the nylon out and the melting grease hits you, be very scared of this smell.
