Changing gears in a 10 bolt........

Ok this is non 3rd gen but it's pretty much the same thing. My roomate has an 87 Chevy Pickup and he's going to get the gears changed. It's got a 10 bolt (just like a 3rd gen would) front and rear. He's wondering how long it would take an experienced shop to change these gears over to some aftermarket gears with a different ratio? Thanks for the help in advance!

just a guess but i'd say 2 hours would be close to the flat rate on one gear set r&r.
