Re: auto swap
Welcome to TGO.
I think the reason you see most Z28's with auto tranny is because, if they are a 350ci car, that was the only option available. The 5speed (T5) won't hold up well to the power of the 350 motor, and thus GM never offered a 350/5sp option in these cars.
To swap to a 5 speed, you'll need the tranny of course, the crossmember, and the pedal assembly from a 5 speed car. You'll have to cut/drill holes in the firewall for the pedal assembly, etc. There's a ton of threads on here about it - use the
feature.
You'll never be able to dog the T5 behind a 350 or anything bigger- it won't handle it. Many folks swap in a T56 6speed from a 1993 - 2002 F-body car - much stronger tranny, but more expensive swap. T-56 can handle alot more motor.

Welcome aboard thirdgen.org.
There is a tech article on the topic linked from the thirdgen.org homepage. The Transmission/Drivetrain forum would be a better place to search for info (moving there now).

Re: auto swap
I did it a few months back - In hindsight, it really wasn't that bad to do at all. Basic hand tools and some way to cut a hole for the shifter and the clutch master cylinder and you can do it.
