94 caprice trans problem/questions (trans rebuild)

I new something was wrong. because a couple times it took to long to find a gear and 2 times it didn't find anything till i let off. so this morning i brought my car in to have the trans-go shift kit put in it and a trans flush.
when the tech/owner took off the trans pan he found a 1/4 inch of fine gooey clutch stuff in the bottom of the pan. should also mention that the 2 little screens on the valve body plate were plugged up so bad that they collapsed a bit. He recommended i rebuild it.
i want to know what stall i should go with being i have to replace the converter (1600 or 2000 stall)? he said to go with the 1600 stall because its a daily driver.

sounds like a heavy footed grandma. LOL. What do you plan on doing with the car? weekend track toy? daily driver only?
