All the aftermarket bolt-in 12 bolt or 9" diffs for third gens are around $2000 for a complete diff.

My old 10 bolt took 500 HP. It was beefed up as per the "ultilate 10 bolt buildup". The only reason I went with a 9" is that I've gone with a transbrake this year and I knew the 7.5" ring gear wouldn't take more than 1 hit.
Cheapest way? Find a center section with gears and carrier that you want to use from a local sale. Chances are the carrier will be 28 or 31 spline. You can buy a 9" aftermarket housing and axles for around $900. Make sure you specify the spline count needed when ordering. Install some brakes on the new housing and install it.
How much you pay for that center section will depend on what you want in it. 3.73 type gears and a posi would be the typical choice.
You could really cheap out and pull a ford truck 31 spline open diff center section out of the junk yard for next to nothing. It'll have 2.xx or maybe 3.xx gears. Pop it into the $900 housing and you have a 9" under the car for cheap. Later on when you have more money buy a posi and gears for it.

Assuming everything else has been changed to take the abuse such as aftermarket 28 spline axles, solid diff cover with bearing cap supports, welded axle tubes, solid crush sleeve, the weak link is still the tiny teeth on the ring and pinion. Everything else just helps keep it all together but there's nothing you can do about the ring and pinion. If they make them, buying a set of Pro gears for a 7.5" will be the way to go but a 7.5" is NOT a performance diff so good performance parts are hard to find.
Shocking the diff will break teeth off very quickly. Don't use a transbrake, don't do a high rpm clutch drop, don't use NOS off the line and a 7.5 could probably run 10's.
