quick temp problem hellp

hey there. i got a 89' 2.8firebird with about 115000 all stock. well my question is as follows. my cars normal driving temp is about 180. when i have a constant idle of about 3100 rpms or up my temp starts to climb slowly. driving from my house to my friends is about a 25 min drive straight goin 65. well doin just that puts my car at about 240. but when i slow down my temp drops back to 180. any suggestions would be great.
since the problem started 2 weeks ago(see im gettin frustrated and want it fixed) ive put new plugs and wires, changed oil, ha tochange freeze plugs, and flushed the system.
i wanna do a 180thermo with the comp chip to go with it. hoping that fix. but dont know. ill have to try to see.

so letme know what you think

So when your on the freeway, and your say..3100 your temp is climbing? That dosnt seem right, even if the thermostat didnt kick the fan on or the fan isnt coming on for some reason..the air should hit the raidator and cool the temp down..is there anything blocking it..cardboard or somthing...

Is your fan shroud, and air dam under the car all intact?
