Stock water temp sender for gauge is on the driver's side head by #1 cylinder and the oil pressure sender is by the oil filter. At least on my 3.1, that's where they are...

so you remove the stock sensors in favor of aftermarket ones?
I was hoping to find a place on this motor to add a water temp and oil pressure while maintaining stock sensors as well

That's how it goes. Think of it this way - the sending units are for the gauges and speak the same language. I have digital gauges in mine and had to put in digital senders (for THOSE gauges) so the gauges would work.
For the oil pressure sender, you might have to find an unused port next to your stock sender, I did. My stock sender is 3 wire (oil pressure fuel cutoff or something like that) and the digital a single wire - so I have 2 senders at the oil filter.

for the water temp, I'd look to tap a hole right on the waterneck by the top radiator hose. or buy one with a sensor hole already there
