how much hp would I gain....
Now that I finally have some money, I'm thinking about putting a good cat-back on the V6. How much hp should I expect out of it? And how much should I expect to spend on a good one? I'm not talking Borla or anything expensive like that though.

Good reason for a dynomax, got it where it counts, and not so loud it embarasses your date. What good is a car if you can't get laid in it?
And you can get your Dynomax installed from CarX for like @250.
I used to be staunchly against letting anyone else work on my car, but you spend enough time underneath it (shift kit, tranny swap, exhaust, etc) And you never want to see the underside of your floorpan again.

I prefer the Dynomax sound, because everyone near me has a Flowmaster. That's the only reason. [grins] As to HP, maybe 10-15... enough so you'll feel a difference.
Oh oops the part # for the Dynomax Super Turbo cat-back system is #17493, if you order from Summit Racing, make that into WLK-17493. I think it was $150 when I last bought it. They make a Ultra-Turbo system that is basically a stainless glassback muffler with stainless tips- and it's almost twice as much.
