What is a good low temp thermostat?

i have a 3.1 V6 MFI 92 camaro i saw at autozone there were thermostats for like 6 dollars... they (autozone) have a book that tells you what to use for my engine but it says use the 190 degree thermostat.
i heard that people here use a 160 degree thermostat, i saw the 160 degree thermostats on the shelf but dont think it will fit(cause the didnt mention it in the book) what or where should i go to buy a thermostat... can u give me a brand or any other details on what to get?
