I parked my car for the winter about 2 months ago for winter, usually I just clean it up and put a cover over it. I was watching this show and it said you should drain the oil and put new oil in it when in storage, does it really even matter?

No reason at all to do jackstands. Things will rot whether the damn car is in the air or not!!
Also, jackstands on a third gen can be a shaky proposition. These cars have flexible chassis', and if it isn't perfect, you'll flex the unibody. There is NO reason to do jackstands unless the car is off the road for a VERY long period of time...not just a winter.
Also, I wouldn't drain the oil, as I like to start mine every 2-3 weeks, and let it run for 30 min or so and get real warm. Nothing's worse than not having your seals get lubricated properly for 4 months.
My advice is to park it in a garage with a cement floor, put down a plastic tarp to keep moisture away, cover it, fill the tank and add dry gas, and run it every couple weeks or so. Works for me
