I just started having an issue with my Firebird.
First symptoms a few days ago were and almost complete shut off while driving or slightly accelerating, back out of the throttle some and got back in it and things were good.
Two days ago just left the house and within a mile it started losing a lot of power so I pulled to a side road and it shut off.
It will refire almost immediately but then shuts down in a few seconds (almost as if it's running out of gas).
Fuel pump is running and I replaced the fuel filter with no change.
Where is a good place to start?

Fuel injectors, if the original factory injectors are still in the engine they need to be replaced. The coils are shorting out and the ECM can't drive them.

How many coils would it take to do that or does just one trip the ECM out?

It can take one injector coil to prevent the ECM from firing them. It needs to be seriously shorted, but it has happened.
Usually you will find 2 to 4 are in various stages of shorting out. The proper resistance is about 12 ohms, anything below that is trouble.
