If the paint is old, this will happen. Or is you were fortunate enough to have your car painted at Van Neuys in the late 80's and early 90's you'll just get giant flakes of your paint in your rag.

You have a non clear coat finish on your car. Period, end of mystery. People with clear coat have the exact same situation, except the crap on their rag is clear so they don't see it!
Virtually all waxes are mildly abrasive. That's why they can make dull paint shine... it's mild abrasives remove the crap on the top layer of paint. Oxidation, dirt, etc gets removed with the abrasive, leaving nice paint. This is also removing a very small amount of your paint, which is what's making your rag turn color.
Once you have your paint looking good, you can switch to a non-abrasive polish. They're hard to find at auto parts stores, but they're out there. The upper end maguires and Mothers stuff should have a pure carnuba line (hint: Pure carnuba is a solid, so if it's in a squirt bottle, it's not pure carnuba!). There are also non abrasive synthetics like Zaino, which I use. I'm very happy with the zaino, although any other non-abrasive product will work great too.

I had the same issue with my paint and yes my paint is very old and the clear coat is almost gone in some spots. A few years ago when I found paint coming off on the rag like you saw the paint really didnt look that bad. But yea, that was a few years ago. The way my paint looks now just might be the future of your paint! I say, save up now and plan to drop about 3Gs into your new paintjob before it starts looking like mine. Oh and I dont suggest macco, ever.
