I'll get my new rims in about 4-5 weeks or so, and will put up my flawless 16" IROC rims for sale, how much should I ask/expect to get for them...?
Also, would they be worth more or less if I take my time to remove the paint and polish them..?

I would say for those ones $350. But seriously dude ebaymotors will get you the most money by far... You wouldn't belive how many dumbasses with S10's or other non iroc rim worthy cars want those things. Of course I would rather sell them for $300 to someone who owns a camaro that $350 to someone who owns a Prelude So its up to you.
