I have a 87 GTA and would like to degrease the engine. Is there anything that I need to cover so that water doesn't get into something that shouldn't have water. I'm going to use GUNK engine degreaser. The foamy stuff for older engines.

Try to avoid soaking the altenator and the air filter/intake..
Use a pressure washer, it isn't 100% water so there should be much standing water after you're done. But do try and keep the spray away from wiring. You don't want to break any of these old fragile wires.

Hose it down with Castrol Superclean, wait 5 minutes, and hose her down. You may have to brush it a bit, but it worked really good on my 305.

CD2.

Pressure washer 8 years ago when I bought her and just the do-it-yourself car wash engine degreaser/spotless rinse with Eagle 1 tire gloss all wiped off after about every 6 months:

GUNK cleans off anything!!! So well in fact, it can dull the finish on various underhood parts. I use GUNK on my DD S-10, but never on the Iroc. -only Simple green and soap and water.
I typically put a plastic grocery bag over the battery, dist. cap, and alternator. Some people clean it while running, but it's everyone has there different methods. Anyhow, soak it down with simple green, let it sit about 10 minutes, soak it again and clean with a rag. Rinse, then wash with soap and water. Probably overkill, but the soap and water makes me feel like all the simple green is gone. Piece of mind I guess.

Do you cut the Simple Green, or apply it full strength? My '92 needs an engine cleaning, but I've been afraid to do it.
I've always used it straight up, no cut! ....I've heard it's even safe to drink, but so far I haven't tested this rumor.
....anyhow, I've never had any ill effects from it being to harsh. ....as I stated earlier though, I DO like to use soap and water to make sure the simple green is all removed.
At the end of the day....EVERYTHING is abrasive to some extent.

I'm going to try your method this weekend, Abubaca. For the water do you use a pressure wand or just a regular garden hose+nozzle?

On My wifes 92 vert, I used simple green with a garden hose on a cold motor(brushed real greasy areas), then followed with soap and water. I used a regular garden hose and it turned out great. I bagged the alternator and was carefull not to flood intake area too much.
just a regular garden hose.
keep in mind though, mine is pretty clean, and I don't drive it much. If yours is pretty greasy, it's gonna take some elbow grease.

I did this today, using Abubaca's method. I'm glad I did it, although my engine bay is just not going to look like some of yours, unless I remove, polish, and repaint everything!
