Which carb to use, multiple choices and not sure which way to go!

Which carb to use, multiple choices and not sure which way to go!
Sup all,
I'm finally in the process of rebuilding my drivetrain in the '83 T/A.
Here's the situation:
I'm getting a 700r4 with stock stall, LS1 Rear and a complete stock 350 with vaccum adv dist.
This will replace my shot 700r4, peg leg drum rear and shot 350 with no vaccum adv dist.
The engine's off an early 70s car (70-73 Camaro says the seller, not sure on that). I'm thinking of doing little modifications to it. Nothing big. Just headers, cam/lifters, and double roller chain.
The cam/lifter set I'm looking at is a Lunati 10001LK http://www.summitracing.com/parts/LUN-10001LK/
and the Lunati double roller set http://www.summitracing.com/parts/LUN-93099/ (Just a side question, will I need a new timing cover with this?)
Now the 350 is coming with a stock intake and stock mechanical choke Qjet carb.
Currently I have my electric choke Qjet carb on my stock (I think?) intake.
The seller is throwing in an Edelbrock Torker intake (squarebore if I recall correctly). No carb.
Now which direction do I go if I'm taking the intake off to change the cam/lifters anyway? Which carb would I use with the Torker intake? I'm looking for performance with some fuel economy. The problem is that I don't know anyone who's good with Qjets around me so they are an issue. Looking for something that's drop in with little modifications, I WANT TO USE MY STOCK AIR FILTER ASSEMBLY (I like it).
Ideas?

I'd pay him extra to not give you the Torker.
What application is your Quadrajet from? Is it the original CCC one from the car, or is it a non-CCC one that came with the 350?

LOL!
My Qjet should be the original. I know that it was rebuilt like 5-6years ago (didn't do much). Don't think it has been replaced before that as it still looks like the original. It should be the CCC w/ electric choke one from the car (we've had the car since 83). All the connecter ports are there.

If the computer, carb and distributor are all there intact, why not keep them?

I don't know much about tuning them and don't know anyone that does around here. I've read on here that they're good carbs if you know what you're doing, but that's the problem.

They're the same as a non-CCC Quadrajet, only easier because the computer does some of the tuning for you.
