i would do higher then 160*, and definetly have the fan come on above the thermostat opening temp.

I agree, from what I understand, if you get anything under 180*, the system may never go into closed loop operation, according to TPI Fuel Injection Swapper's Guide.

Closed loop will happen at about 110 degrees coolant temp. Thats just a reference temp that the O2 sensor and CTS pull it from open to closed loop. Anything colder than a 180 stat causes reduced gas mileage and generally a richer than normal mixture on EFI engines. This subject gets more than it's share of discussion and everybody seems to be an expert. Truth be told the engine runs it's best right around the stock 195 temp. A 180 is an acceptable compromise since the engine depending on driving conditions will still average around 185-200 degrees. And, it's not just emission related as far as temp is concerned. Almost every car and liquid cooled motorcycle run at 195. That's where engines are most efficient. Some GM's run a stock 180 stat but that's as low as I would go.

Are you running a computer? If not, I'd go 160*stat and fans come on around 180*/190*.

If it is computer controlled then a 180* stat and 190* fan switch would be fine.

Or you could have one that is specifically built to run coolers like mine
