Over heated........then car shut itself off

I took my car for emmission test the other day and while I was waiting for my car to be tested the temp started rising. It went up to about 220* which is normal when I let the car idle in one spot for a while. So its finally my turn and the guy pulls my car into the bay and starts the test..... They had to stop the test because the temp gauge went up to 240 or 250 and they didnt want to take "any chances" So they told me to come back when I fix it. (NOTE: This is the first time this has happend to the car in 4 years.) So I pulled the car out of the bay and it started cooling down when back to 180* or so, coolent level also went down. As I am about a block from my house the temp SKY ROCKETS passed 260* and the car shuts down on me. I get out of the car, pop the hood and there is no coolent to be seen ANYWHERE. The drain plug blew out while I was driving and I didnt notice it.

Long story short, drain plug blew out and I dont know how long I was driving the car like that. We did start the car later after it cooled down for 6 hours. And it did run............

I have the air dam on, 160* T stat, 16lb radiator cap, A/C delete, heater box delete, and the wheather stripping on the hood (by the winshield removed).

My fan does work, the sensor on the intake manifold appears to be working.

Are there other things that I may be missing

My water pump secretly "blew" a few days ago. The bearings went out or whatever happens to them and I was leaking like a banshee out of the hole on the underside of the pump. Refill it and watch the lower hose area while it's running. If it looks like it's leaking behind the lower radiator hose then maybe your pump has gone bad.
