Just a guess but really the only thing that it could be.... is...

Maybe by having the A/C on, when the fan kicks on, its cooling the engine and putting the motor at better operating temp.

the engine speeds up when a/c is turned on,

ECM tells it to speed up

try it in park/neutral and youll see,

if its all working how its supposed to then the engine will speed up when you kick on the a/c

Doesn't the "high idle" valve on the body of the carb extend when the A/C is turned on, thus mechanically increasing the RPM?
Could be malfunction?

Jim.

you could have a small vacuum leack and when you kick the ac on its kicking the IAC valve up and stuff to make it run a little faster rpm, that may smooth the running out. you could also have an IAC problem that once it drops off to a certain level it cant mantain itself, youll just have to start looking around to see what you can see
