1986 trans am 383 overheating

1986 trans am 383 overheating
I put a new 383 stroked into my trans am. I have a new summit rad, 2-10inch 2400 cfm fans. I cant get the car to cool down, it is heating up to 260.
I have done
checked for air pockets
new high flow water pump
new summit rad, alum heater shroud
2 new 10in 2400 cfm fans
new 180 degree thermostat
checked plugs to see how car was burning
anyone have any idea's?

Have you checked ignition timing? It will run hot if the timing is retarded. When does it get hot, at idle or going down the road?

thermostat might not be opening up all the way (even if it is a new one). could try drilling a 1/4 inch hole in the thermostat and see if that helps any.

have you checked the temp with some external method (thermometer, etc) your gauge could just not be reading properly.
