200 degree fan switch

200 degree fan switch

I'm running a dorman taurus fan with a 195 temp switch. I have a 185 degree thermostat and it seems like the two things are basically fighting each other and the fan just wont turn off. Initially I thought I might be able to get a lower thermostat but I would have to go to a 175 and those aren't legal in CA? So the next thing would be to get a higher temp fan switch.
When my car last overheated, the engine shut off at about 221 degrees. That was the reading on the gauge on the aftermarket cluster I have installed. I have checked the temp at the top of the manifold with a handheld heat sensor and it read the same as what the cluster reads so I am taking it as being accurate.
What are my options in running a 200 degree fan switch? Is there some way I can set these things by dialing in a temp I want? Or do they always have to be a fixed value?
