Cooling hysterisis

I have a 5.7L TPI aftermarket dual fans, have an ecm programmed to turn the fans on at 195 off at the stock temp. Wanting to know if a 180* thermostat will provide the correct hysteresis for the fan on/off temp and stock coolant temp sender or should I get an 185*on cts or any other ideas. Thank you.
