Are you looking to replace the mechanicals only ?
You'll have to remove the cluster (search will net you those details if you are uncertain) Then remove the gauge assembly (pretty straightforward once cluster is out). If you're replacing the entire assy, you're done, replace old and reassemble. Gauge assy out, pop needle off and remove mechanics then replace. Needle on you can "calibrate" the needle using resistors betweent the sender wire and the block. 185ohm resistor should show 210°, 55ohm-260° (roughly, according to a few values I have).
After I repainted my needles, I calibrated my gauge by when the JET fan switch turned the fan on (200°). OEM gauges aren't terrible accurate so I wouldn't worry too much, close to accurate is enough to see if anything is seriously out of ordinary with engine operations unless you're really **** about monitoring engine vitals.
