How can you tell the difference between a v-6 and a v-8 instument cluster?

speedometer has a lower setting than the V8.

so the v-8 is the 115mph right?

yes or in some cases the V8 would have a 145 MPH speedometer.

thanks now to go junk yard diving... one more q, can i use v6 cables or i need v-8?

If you are referring to the speedo cable, it is my understanding that they are inter-changeable among the cars that had them.
