Should i rewire my car?

I have a 84 Z28, that had a L69/700R4 combo, it now has a carbed 350/Turbo 350 transmission. All of the smog stuff is gone, as well as the AC. I pulled the engine and transmission out to do some other things to the car. Under the hood i have about 60 wires, and i only need about 6-7 of them. This car is 20 years old now, the gauge cluster is coming out in place of autometer gauges, there is no computer in the car. I have the interior mostly out also. Would it be a good idea just to get a painless wiring kit for the car and rewire it? Im a auto technician, still young (20) i can do wiring, but i dont have a lot of experience with it yet. I can do stereos and the like very very easy. I heard the painless set ups are very simple. Would it be a good idea to do? How hard would it be? Thanks
