Digital Dash to Analog
If I wanted to get rid of my GTA's digital dash and go analog, would I just need the cluster and bezel? Or do I need an analog harness?

You would need to get the analog connectors for the dash carrier and move all the wiring over to those connectors.

IMO: Easier to just unbolt the dash housing,..... remove the GTA DD dash harness, & install teh analog harness in it's place.
The Body/Taillight harness ( from about the rear of the drivers door back) might be different too. Well,...... I know it's different, but not sure if the analog version is plug and play. *MIGHT* need to splice a few wires if you swapped to the analog Dash harness.
P.S. I've got an analog dash harness from an 88 Formula.

You need to replace just about every harness on the car.

Gosh it's hard for me to understand why anyone would want to swap the digital dash for analog. I know it's a matter of taste, but to my eye, the GTA digital cluster is one of the best looking designs to come from the 1980s. It's visually stunning.
