1- Hays sprung 6 puc ceramic disc, 26-spline
Like new - $50 shipped used less than 100 miles

What would I do about a pressure plate if I bought the last one? I'm a little new to 5 speeds. 
This will fit my stock T-5 though right?
Anything else I would need?

GM T-5 have a 26 spline so that part works.
You probably should buy a TOB or I have a Hydraulic slip on TOB for sale as well.
