Re: 5.7L swap
the 5.7L was an option beginning in '87. By '90, it was up to 245 HP. They can be modified to well past 300 HP. And it would be a great swap if you want better acceleration.
If you do, then start with all the supporting mods, like 3" cat-back exhaust, then headers with y-pipe.
When you go engine shopping, the best versions are '96-'98 pickups. If your donor is '87-'95, then don't bother with the heads, just get the short block assembly.
I'd like to type more, but I have an appointment to get to. Later!

Externally, the 5.7 is completely identical to the 5.0.
Your issues will be exhaust (like Atilla already said - your RS exhaust is horrible, even for a 5.0), and modifying the TBI to handle the extra cubes from the 5.7. The TBI forum has more information about those details.

Yes, try the local salvage yards. A complete '96-'98 Vortec 350 is worth just under $200. If the local yards want very much more than that, you know they're trying to screw ya.
Take your time, don't be in a rush. Be sure the donor was totalled, otherwise pull the heads to look for any big obvious cracks.
Be sure the heads have casting numbers ending in either 906 or 062.
