Completely redoing exhaust. Headers, Y-pipe, and cat-back or true duals?

Ok, here's the deal. I just got my TPI in the mail, am going to swap either a stroked 305 or a built 350 (more likely). I don't have to pass emmissions here in TX. What is the easiest and most cost-effective way to run my exhaust: True duals at the exhaust shop or cat-back system? I was leaning towards the cat-back because if I get headers and Y-pipe, a new cat, then it will just be plug-and-play, and I won't have to . Oh, BTW, since the chassis is a bit different on my convertible, will this affect what kind of exhaust system I can use?

I'm not tested for emissions either. So, I removed the cat. Personally, I'm probably gonna go from headers to a y pipe right through the stock location. I plan to have an intermediate pipe bent to factory specs except that it will be 17" longer on the front end to compensate for the missing cat. I am happy with the sound of my eddlebrock muffler (1 inlet 2 outlets). I'm also just gonna use a new set of stock tail pipes.
I'm going this route because cost is important to me simply because there are other things I want like a set of 3.73 gears.
Plus i like the way the set up sounds and It should flow enough for my application.
Since your planning to go with a built 350 you may benifit from true dual. If you go this route you must install an H pipe (balancer, crossover, X pipe, whatever) in order to maintain overall engine efficiency.
