Again, take the seat out and look at how it screws to the brackets. There's a second set of holes that line up with 3 of the bolt holes that move the seat back 1.75", you only need to figure out how to extend the 4th. When I did mine I also cut and welded the rear seat bracket pedestals by about 1", so when you slid the seat back it slides the seat down also, it pretty much sits on the floor when mounted like that and slid back. I'm only 6'4" but have disproportionately long legs for my height. I've also found that in a hardtop car I couldn't put a helmet on at the track without lowering the seat. T-top cars have more head room but the first time you smack your head against the glass going over a whoop in the road you'll want the seat lower before you drive the car again.
The nice thing about doing it this way is that sitting all the way back you're down lower and at a more comfortable angle for you, and when you slide the seat forward a "normal" person doesn't really feel the change.
Yeah, I have not seen any new options since I built mine. Mine still works well. Though I think I would like to pull them and add some structure for strength. I feel a small amount of movement in the seat. I can't tell if it is the aftermarket seat or the mount is flexing. I am betting the mount is moving a bit. I will keep my eye out for new options... Oh, well there is the Detroit Speed option... if you think it is an option. They are a really cool idea, but at $500/seat... not really an option for me. Look on their site for the DTZ third Gen. Amazing car, but they are obviously on a different budget than many of us. I think the engine in the car was like $20k. Is fun to watch it pass race Vipers in the track videos. Nonetheless, their bar style might give you ideas around new ways to fabricate. They weren't around when I did mine or I might have explored their idea. Just can't do their pricetag.

I fabricated my own seat mounting plates for aftermarket seats with built in slides and moved them back ~6 inches.
They are welded to the sub frame cross member for strength.
The wrap around high back seats tucks in nicely as the seat slides backwards providing critical cushion between my head and the roll bar.
I also modified the seat to raise the back up 3" to properly align shoulder height to seat belt cavities.
Plenty of leg room and sliding forward supports average height drivers although they are banned from this car.
