It is a lot easier to install the carpet and seat covers if they are warm. I let them sit in the sun for a while. also you will need hog rings and hog ring pliers to do the seats. The carpet is pretty self explanatory.

Hog rings look like big staples and they are used to hold the material to the seat foam. Auto parts stores should carry them along with the tool to install them. I bought mine online off of amazon. Do a youtube search for replacing seat covers and you will get a better idea of what you're getting yourself into.

Yeah, that will look like crap.
Look at the floor contours of your car, no way you are going to make something flat fit that well.
If you are a genius at constructing three dimensional shapes from 2 dimensional materials like good upholstery guys are, go for it. Your time would have to be worth very little if you think its worth the hours to do the carpet that way.
The auto carpet they sell by the yard is used for older cars that have frames, their floor contours are generally simple. Great for vans or truck customizing. You want the molded ones.

Is there any type of pading you need to get or does the carpet come with padding?
