T25 turbo grand prix, tear it right off of a Turbo Grand Prix and bolt it onto your car.

What kind of a challenge is that?

How about any of the .63A/R exhaust T3's, GN, t-bird...? Any of the smaller T04's, most of the larger Mitsubishi turbos... will all work. If you want to make BIG power out of one of those relatively small engines I'd consider an HY or HX35 off of a cummins... it will be a little slow to spool, would easily blow up a stock engine, but on top of the right, well built small 6 should be good for 500+hp.

How much power do you want to make, what kind of response are you looking for and what is the rest of the combination like?

As far as easy to hook up, that's entirely up to you. If you don't have any idea what's involved this probably isn't a project that you should be considering.
