First, it is never a good idea to use a used head gasket. Once the head has been removed, the gasket usually sticks to the head or the block. It would take a lot of care to get it off without damaging it.

Second, the only way that I think it would cause over heating is because it's letting water go into the oil pan, or out the engine. Once there is enough coolant gone, of course the engine will overheat.

Other than that, I don't know of another way it would cause over heating. Not that I can think of now.

Re-using a head gasket could cause overheating if the high pressure combustion gases are leaking into the coolant (bad sealing). You can buy a kit to check for the presence of these gases in the coolant. I would not be at all surprised if this happened.

Some head gaskets are designed so that re-use is possible (maybe not the optimum plan, though). Solid copper head gaskets, for example. Yes, you would need to be very careful removing them.

Yea, what he said. The combustion/compression will leak into the coolant and the pressure in the radiator will skyrocket. Some people say you can tell because there will be bubbles in the radiator. Or you can use a pressure tester on the radiator. Regular pressure won't go much over 15psi. I saw this situation on a buddy's car that had blown a head gasket. As soon as he'd start the car, coolant would shoot out of the radiator like a gyhser if the cap wasnt on. If it was on, the car would start to overheat in about 5 minutes flat.
IMO you should never re-use a head gasket after it has been compressed.
