Head Gasket Help

Anybody know a manufacturer who makes a good thick head gasket? I am afraid my compression is gonna be way too high.. I told my engine builder I had 58cc combustion chambers in my heads and he still didn't compensate with correct pistons and proper decking/machining (went overboard). All I see in Jegs and Summit is .041 compressed thickness max. I have heard of "shimming" heads.. Is this a myth or are there such products? Help!!

call jegs and ask the tech person, i'm sure fel-pro makes a thicker gasket then the .041.
