What should I do with my charcoal cannister?
I've removed the cat, smog pump, air diverter valve from my motor already. Do I need to keep the charcoal cannsiter? It's a 450+ hp efi motor which uses the same fuel rail/line assembly as a stealth ram. Plus I'm gonna add nitrous later. Do I need to keep the charcoal cannister?
I also plan on swapping to an ls1 plastic fuel tank. How will that play into things?

I removed the charcoal cannister from my car because the TVS purge valve had died and my car would run rough until it got warm. My car ran perfect when cold when I removed the charcoal system.
If you have to worry about emissions then removing the charcoal system could affect you, but having said that, if you were worried about such things you wouldn't have removed the cat and other stuff.
With my car, the line that fed into the charcoal cannister from the fuel tank was the only way for it to breathe, so blocking this off will be a bad idea as you'll be needing some sort of filter to go over the end. Alternatively, block the breather line, and get a breathable fuel cap.
I shouldn't think using a plastic fuel tank will alter things, but I don't know for 100% certain.

I think I would cook a steak.
Why not keep it? Part of the function is to handle vapors from the tank. As far as I know, that function won't ever go away. Of course, we'll hear that there is no point in doing that from some.

leave it open. rout it somewhere in the fender or where you want to have it. you can also put a breather on it so that no dirt or something comes in it.

I also removed my canister. Can I just shorten the line, and put some sort of filter in the back by the tank? Is it necessary to keep the line at all, because the tank has another line that comes off the tank which has what looks like some sort of filter already.

If you want to set it up like the pre-charcoal canister days(pre-1971) plug or remove the vapor line(plug gas tank port then) and install a vented gas cap.
Install a vented gas cap? Good luck... I couldn't find one that fit.
I refer to your common inline filter found on most modern EFI systems as an EFI fuel filter. My car uses small paper element in the fuel inlet of the carb, as most factory carbs do. I used a fuel filter over a breather because I had one laying around.
