valves question

valves question

ok so next question on my next subject of curiousity.

when im checking out valves to buy I see this:

regular SB-chevy

and SB-chevy with 11/32" stem

how do I know if i need the 11/32" stem or not?

same thign for head and stem diameter? how do i determind the lengths i need as well? thanks!
